Hi, I’m Brielle, the baker and founder of red bell bakery.

Red Bell Bakery has been a long time coming. I've been baking for decades, trying new flavor combinations, taking on new baking challenges, and finding new favorites.

One of my earliest memories is learning to bake chocolate chip cookies at my nursery school teacher's home summer camp when I was three years old. I am transported back to her kitchen every time I open my container of light brown sugar.

I'm fascinated by the chemistry behind baking—why ratios matter, what baking powder actually does to a cookie—and I love using what I've learned to create new confections. I'm inspired by the flavors I love: cookies & cream ice cream, fruity cereal, pistachio and chocolate, and warming spices like cinnamon and cardamom.

The bakery's name is also incredibly meaningful to me. Every day after school, my mom would cut me a red bell pepper. It became my favorite snack, and to this day, I often have at least two in the fridge, ready to slice. In homage to this flavor, which I don't think we celebrate enough, I'm working to develop what I hope will become our signature bake: a red bell pepper loaf. Red Bell Bakery is my passion project, running alongside my full-time career as a professor of marketing and administrator at Portland State University, as well as my independent consulting work. I typically bake one day a week, and pop up in the Sellwood neighborhood of Portland, Oregon with new treats I know my neighbors will love.
